COFFEE TRADITIONS

There are many parts of the world where drinking coffee is a tradition.

It also has a great place in the Ethiopian and Eritrean cultures where brewing coffee is often a way to bring friends and family together for casual conversations. It is prepared and served with an elaborate ceremony where coffee is roasted, ground and brewed on the spot using traditional equipment such as charcoal burning stove, roasting pan, brewing pot made out of clay called "Jebena" and served in small, decorated ceramic

espresso coffee cups. The coffee is roasted medium to dark roast based on the preference of the host, ground coarsely, brewed in the pot with water. There are two varieties of the pot. One from Ethiopia which has two holes one dedicated to pouring while the top to filling with coffee and water. The Eritrean variety has only one hole and for this reason it requires a small coil of mesh plugging the hole, often prepared from natural fibers to filter the coffee as you pour it. The coffee is left to settle a bit before pouring. After the first round of coffee is served, traditionally you would refill with water and brew again the same coffee up to a 3rd round through the course of which it gets lighter. Coffee time is always a pleasant moment of gathering where people pour their hearts out, share the latest news in the country, events in the neighborhood or among the family. Simply put it is a time of social therapy.
